More Pancakes Please!

Pancakes are good. Really good. They have been even better than good since I found out I was pregnant back in March. Pancakes are definitely one of my cravings.

It doesn't matter what kind of pancake (blueberry is awesome), what size of pancake, or what kind of topping. I love them all. I will even eat them plain, cold, leftover, and straight out of the fridge. Yum!

Frozen waffles have also taken up residency in our home. Sometimes I just don't have the time to whip up a batch of pancakes in the morning and the frozen waffles come quickly to the rescue. Thank you Aunt Jemima!

Come to think of it, all breakfast food has become even more delicious to me since Baby E. Growing up, breakfast was my least favorite meal of the day. Now, I wake up ravenously hungry (sometimes at 2 am) and raisin bran has never tasted so good! I have also taken to make breakfast for dinner quite often. The added bonus of this approach - leftover pancakes for the next day. Seriously, it's brilliant . . . and yummy.

My cravings have come and gone. One week, I couldn't get enough of root beer floats. Currently, I'm also fond of potatoes. Ice cream is a given. I especially enjoy Turkey Hill All Natural Vanilla Bean Ice Cream. This is the best vanilla ice cream I have had in a long time. Get some. You will thank me. (And, it makes excellent root beer floats.) The Salted Caramel flavor is also dangerously delicious.

I am also glad to say that my desire for fresh vegetables has almost completely returned. During my first trimester, I wanted nothing to do with salad . . . and I love salad! Cooked vegetables were fine, but for whatever reason the thought of eating salad made me lose my appetite all together.

All this to say, pregnancy does weird things to you. But, regardless of pregnancy, pancakes are really good.
